Texas Barbecue Photos: Salty Sow To Open In Former Red House Pizza On April 24th 2012

We’re getting excited over here in East Austin. The smell of  smoked pig meat is about to begin wafting through the French Place neighborhood as Salty Sow, the newest restaurant from Larry Foles and Guy Villavaso of Hopdoddy fame, prepares to open.

Rumor has it that the new restaurant is already in hiring mode and if the success of Hopdoddy is any indicator they’re going to need a big staff of workers.

If lines to get fed at nose to tail trailer Three Little Pigs are any indicator, Salty Sow’s business model; eat the animal-the entire animal, is a sound one.

Expect heaping plates of haunches, feet, tails, kidneys, hearts, faces, ears-we can’t wait to tear into some smoked thymus glands and maybe have a spleen chaser or two.Salty Sow is to be located inside the former Red House Pizza building at 1917 Manor Rd
Austin, TX 78722.
