The brisket arrives and it’s sliced into several good looking hunks but there is little flavor. It’s plastic spoon tender but has no seasoning and little smoke. The fat has been trimmed away, perhaps prior to cooking as the meat is extremely lean.
Sausage is brought in so we don’t bother. We’re done eating commercial sausage. If we need a factory sausage fix we can always head up to HEB or Fiesta Mart and grab a pound for a song and throw it on our own smoker.
Pork ribs are better in the sense that the meat has a little fat but once again little flavor. We’re spoiled when it comes to barbecue due to our proximity to places like Black’s Barbecue in Lockhart Texas and Louie Mueller Barbecue in Taylor. This is where the icons of the canon know that intensely seasoned, fatty meat is the key to success.
Our waitress is a peach and provides great service. Unfortunately this is the highlight of the meal.
